Healthy, Plant Based & Affordable

People are increasingly aware of the health benefits of a plant based diet.  They might not be aware that it's God's plan for our diets and for our good health - even restorative health (ie healing).  They have found that if you give it a chance a plant based style of diet is comforting, filling (but not a stuffed kind of full), it sticks to the ribs like nothing else, and the tastes are incredible.


There is a knock on a plant based diet that lingers, and that belief is the cost - they say that it's an expensive choice.  This past week I ran across a blog article I'd like to share with you.  Take a momment to meet Darshana Thacker who is chef and culinary project manager for Forks Over Knives.  She is a graduate of the Natural Gourmet Institute, and she’s known for her hearty and distinctly flavorful creations, which draw inspiration from a wide range of ethnic traditions.


Let's see what she has to say in her article titled Plant-Based on a Budget: How I Ate Well on $5 a Day.  In the article she describes, and shows us - recipes included - that she created a ten-day menu of varied healthy meals, using limited resources and ingredients.  Wow.  On $35 a week.
